Update all images to Composer 2.10.2

composer-2.10.2 into main

Covers the five images that install composer directly (bookworm, trixie, patchdemo, fundraising-bookworm-php82, fundraising-trixie-php84) plus refresh entries for all 21 images downstream of them.

The sha256sum is a single shared file symlinked into all five image directories, so the five download URLs have to move together.

Unlike the 2.9.6 pass this skips fundraising-bookworm, -python, -tools-bookworm and -fraud-scoring-bookworm, which neither install composer nor descend from dev/bookworm.

fundraising-trixie-php84-apache2 still says UNRELEASED at 1.0.0, but it was in fact published, so it gets a -s1 like its siblings.
