Update Test Kitchen product_metrics schemas

Updates the following Test Kitchen fragment and schemas in product_metrics:

  • The experiment fragment coordinator enum value of xLab is replaced by default with major version bump to 2.0.0
  • The web base, web base with ip, and web app schemas version bump to 2.0.0 with the exclusion of the deprecated experiments fragment and bumps the experiment fragment to 2.0.0
  • Update relevant READMEs to reference Test Kitchen
